St Cross Chef Daniel Johnson (DJ) has won the BaxterStorey 'Fine Dining Chef of the Year' award in their Regional Chef competition.
Competing chefs had to create one dish in 90 minutes, using a seasonal ingredient of the judges' choice. Chefs were encouraged to use locally sourced produce and to show off their skills, as well as show their technique with presentation and their own creative flair.
DJ's dish 'Rabbit Tasting' included rabbit cooked three ways, complemented with cannellini beans, chervil and wild mushroom.

DJ said: “I am speechless. I didn’t think I was going to win; the competition has been really tough”. DJ received a trophy from the judges, wine, and vouchers for Monica Galetti's Mere restaurant.
